Ironically, the dainty lilac-hued crocus flower that produces our rarest spice—only three delicate saffron threads per bloom—is remarkably hardy, thriving in the extreme sun-baked climate of Afghanistan’s Herat Province. Removing the bright-red stigmas—yellow strands are considered inferior—happens later. About 150 flowers are required to produce just one gram of this so-called “red gold.

  • You can crush it before steeping to speed up the process and steep anywhere from 30 minutes to overnight..
