Herat, Afghanistan

Ironically, the dainty lilac-hued crocus flower that produces our rarest spice—only three delicate saffron threads per bloom—is remarkably hardy, thriving in the extreme sun-baked climate of Afghanistan’s Herat Province. During the fleeting harvest season—late October to early November—rural village women, donning gloves and masks to avoid contamination, start plucking the flowers at 4:30 a.m., avoiding the heat of the day. Removing the bright-red stigmas—yellow strands are considered inferior—happens later. About 150 flowers are required to produce just one gram of this so-called “red gold.

Trent Blodgett's journey started from battling chronic depression to finding solace and purpose in cooking. Trained to cook at an upscale Spanish restaurant in San Francisco led to a chef position running large events and pop up dinners throughout the Bay Area. Immersed in the captivating world of flavors and scents, Trent became fascinated by the history and cultural influences of cuisine.

Driven by his newfound passion, Trent embarked on extensive travels, collecting spices that reminded him of the diverse culinary experiences he encountered. Cooking became his medicine and meditation, transforming his outlook on life. This transformative journey led Trent to establish Spice Tribe, a platform to share his spice blends, stories, and the belief that a shift in cooking perspective can profoundly impact one's existence.

Cooking tips from our chefs

Saffron’s flavor compounds are water solulable and benefit from steeping in warm water, lemon juice or alcohol to extract most of the flavor. You can crush it before steeping to speed up the process and steep anywhere from 30 minutes to overnight. Acidic and warm liquids will also speed up flavor extraction.

Saffron is the most expensive spice in the world and is more expensive than gold! The high cost is due to the labor intensive hand harvesting process. Each flower contains 3 strands of threadlike stigmas in the center which is the saffron we know.

How to tell if saffron is fake?

Unfortunately, there is a lot of fake saffron out there that is died red to imitate high quality saffron. Saffron should be incredible fragrant and not have a strong bitter metallic taste. Additionally when you put saffron in water it should float. Often times fake saffron will sink due to the dyes or chemicals used.
