Creamy Tuscan "Marry Me" Penne Pasta

Ingredients:
- 1 (16 oz.) package organic penne pasta
- 1 tablespoon Extra virgin olive oil
- 2 Tbsps unsalted butter
- 4 garlic cloves, minced
- ½ cup organic grape tomatoes, halved
- 1 tablespoon organic tomato paste
- 1 Tbsp Tuscan ‘Marry Me’ Blend
- 1 cup organic heavy cream
- ½ cup organic vegetable stock
- 3 Tbsps white cooking wine
- ½ lemon, freshly-squeezed
- 1 cup chopped spinach or kale, organic
- ½ cup freshly-grated parmesan + more for garnish
Directions:
BOIL THE PASTA:
- To begin, cook pasta according to packaging. NOTE: penne pasta doesn’t take a long time to cook, usually 8-10 minutes (however, you should cook at 6-8 minutes or so—‘al dente’).
TO MAKE THE CREAMY TUSCAN 'MARRY ME' SAUCE:
- In a medium skillet, add the butter until melted.
- Add in the Tuscan ‘Marry Me’ blend seasonings and stir until well combined. Add in the halved tomatoes and tomato paste, stirring until combined.
- Reduce the heat to medium-low and slowly add in the heavy cream, veggie stock, lemon juice, and white wine, stirring until combined. Let it slightly bubble for 1-2 minutes and then add in the grated parmesan, whisking until fully melted and sauce thickens, about 2-3 minutes.
- Add in the chopped spinach. Ir kale, stirring until combined followed by the cooked + drained penne. Let everything simmer for 1-2 minutes or until the pasta is fully coated.
- Remove from heat once done. Garnish with additional grated parmesan, if desired.
- Serve and enjoy!
