Chicken Parmesan

Ingredients
- 4 Boneless, Skinless Chicken Breasts
- Salt & Pepper to taste
- 5 tsp Spice Tribe's California Love All Purpose Chile Blend
- 1 cup All Purpose Flour (can use gluten-free)
- 2 Large Eggs, beaten
- 1 cup Breadcrumbs (can use gluten-free)
- ½ cup Parmesan Cheese, grated
- 1-2 cups Tomato Sauce
- 1 ½ cup Mozzarella Cheese, shredded
- ¼ cup Fresh Basil, chopped (optional)
- Olive Oil or Ghee for frying
Directions
- Preheat your oven to 375°F (190°C). Pound the chicken breasts to an even thickness, about 1/2 inch thick. Season both sides with salt and pepper.
- Place the flour in a shallow dish and mix in the California Love All Purpose Chile Blend. Place the beaten eggs in another shallow dish. In a third shallow dish, combine the breadcrumbs and grated Parmesan cheese. Dredge each chicken breast in the flour, shaking off any excess. Then dip it into the beaten eggs, and finally coat it with the breadcrumb mixture, pressing gently to adhere.
- Heat a generous amount of olive oil or ghee in a large skillet over medium-high heat. Add the breaded chicken breasts and cook until golden brown and crispy, about 3-4 minutes per side. You may need to do this in batches to avoid overcrowding the pan. Transfer the browned chicken breasts to a baking dish.
- Spoon tomato sauce under and over each chicken breast. Sprinkle shredded mozzarella cheese on top of the sauce. Finish with parmesan cheese.
- Bake in the preheated oven until the chicken is cooked through and the cheese is melted and bubbly, about 20-25 minutes.
- Remove it from the oven and let it rest for a few minutes. Sprinkle with chopped fresh basil, if using. Serve hot, with pasta or a side salad.
