Chicken Meatball Noodle Soup
These flavor-packed meatballs are easy to make and perfect to top off any meal. I love adding these to rice bowls and salads but they’re especially delicious with noodle soups. To make the meatballs, I added lots of aromatics, seasoning, and Spice Tribe’s California Love All Purpose Chile Blend for max flavor. As a finishing touch, I topped my noodle bowl with a dash of Kissed by Binchotan Japanese Chile Blend for a touch of heat.
Ingredients:
- 2 servings Noodle
- 4 cups Broth of choice
- Salt and pepper to taste
- 2 tbsp Neutral oil
- 3/4 lb Ground chicken or turkey
- 1 tbsp Soy sauce
- 1 tsp Sesame oil
- 1 Small shallot, finely minced
- ½ stalk Scallion, finely minced
- 1 Large egg
- 1.5 tbsp Spice Tribe California Love All Purpose Chile Blend
- ¼ tsp Kosher salt
- ⅛ tsp Black pepper
- 1 tsp Cornstarch
- Scallions and/or cilantro
- Spice Tribe Kissed by Binchotan Japanese Chile Blend
Instructions:
- In a pot of water, cook noodles based on packaging instructions. Rinse, drain, and set aside.
- Heat up broth and keep on a low simmer while you prepare meatballs.
- In a bowl, add together all the ingredients for the meatballs. Mix well.
- Form into meatballs and set aside.
- In a pan on medium heat, add neutral oil and carefully add in meatballs.
- Cook for 2 minutes untouched. Rotate and cook all sides until cooked thoroughly.
- When ready to serve, add noodles and soup into bowls.
- Add meatballs and choice of garnishes.
- Sprinkle Kissed by Binchotan Japanese Chile Blend on top
- Serve immediately. Enjoy!
