Thai Style Pork Lettuce Cups

Ingredients:
- 1 lb Ground Pork
- 2 tbsp Garlic, minced
- 2 tbsp Ginger, minced
- 2 pcs Thai chilis, sliced
- 1 bunch Scallions, sliced (separate white part from green part)
- 1 tbsp Long-Tail Sunset Thai Blend
- 1 tbsp Soy Sauce
- 2 tbsp Honey
- 1 tbsp Rice Vinegar
- Cilantro
- Peanuts
- Olive oil
- Butter lettuce leaves
Dipping Sauce:
- ½ cup Rice Vinegar
- ½ cup Shite Sugar
- 1 tsp Spice Tribe Maras Chili Flakes
- 2 tsp Ginger, grated
- 1 tbsp Cilantro, chopped
- Optional pinch of Spice Tribe Aged Anchovy Salt
Directions:
- Mix Long-Tail Sunset Thai Blend and ground pork; set aside.
- Over medium-high heat warm up a large frying pan. Add the 2 tbsp olive oil, garlic, and ginger, and let it fry until fragrant without burning.
- Add the beef and cook for 5 minutes until browned, making sure to break apart any lumps with a spatula or wooden spoon.
- Add Soy sauce, Honey, Vinegar, Thai Chilis and white scallions; cook for another 5 minutes until the beef gets crispy.
- Adjust seasoning to taste.
- Spoon some ground beef into the cups and garnish with cilantro, green scallion and chopped peanuts for garnish
- Sprinkle a pinch of Spice Tribe's Aged Anchovy Salt as a garnish to boost flavor.

- Combine rice vinegar and sugar to dissolve, then add the rest of the ingredients
