Grown in southeastern Turkey, in the city of Şanlıurfa, the Urfa Biber is a dried chile that's used to make our flakes. Most of the agricultural areas in this region are on or around the Harren Plateau, far from the sea but close to the Euphrates River, which shapes the climate in the area. The winters are cold, and the summers are scorching and arid, making it the perfect environment to grow chiles. A natural stand-in for crushed red pepper, this wonderfully well-rounded spice is a favorite of professional chefs worldwide. It's used to bring a smoky flavor with hints of coffee, chocolate, and a slight raisin-like sweetness to everything from hearty stews to Middle Eastern yogurt sauces to roasted veggies.

For the Urfa chile, the drying process is much more important than the actual growing process. The peppers are cultivated on family farms, with some farmers renting out their neighbors land. The chiles turn from dark green or bright red to deep red as they ripen, with harvesting starting around mid-August and lasting up to mid-October. The farmers, along with local villagers, chop the peppers into flakes, soak them in water, and lay them between plastic sheets in the sun to ferment. The key to their consistent flavor with similar results year after year? It's all in the timing of the harvesting process.

We purchase what we need every year right after the spices are harvested. These spices are as fresh as you can get. They are not sitting in a warehouse for multiple years. The oldest spices we carry will be one year old compared to the commodity market which warehouses spices for 10+ years before selling them to you.
